What is the average monthly intake of acai berry?

For medium / high demand:

Kiosk: 80 to 100 cartons a month.

Acai berry houses: depends on that store´s size. On average, 300 cartons a month, but some of our own stores spend 1000 cartons a month.

Acai berry cart: 30 to 50 cartons a month.

What size, brand and quantity of freezers would you recommend for storage, based on your experiences?

One of our clients works with acai berry carts at strategic points and uses two horizontal freezers of 519 liters (137 gal lqd) for its stock. Each freezer, in total, stores 34 boxes of 10 L (338 fl oz) acai berry. The approximate power consumption for each freezer is 84.6 KWh / month.

Does shipping the acai berry from my stock (my warehouse) to my store require any special attention?

Yes, care should be taken not to leave the product too long outside refrigeration, as it may lose its taste and color. Easily solve this issue by transporting the product in styrofoam carton or thermal blanket.

Storage Temperature

Store temperature for acai berry cartons shall be at -18ºC (0ºF).

Serving Temperature

The ideal temperature for acai berry to easily enhance shall be between -10ºC and -12 ºC (10ºF to 14ºF). This temperature can be achieved by installing an external temperature controller in the freezer. We provide this tools for customers that purchase over 50 cartons a month.

At the end of the day, if I have thawed the acai berry to put into the machine but have not used it, can I freeze it again?


Choose to buy an express machine, with the programmed option of conserving the product in your tub. You must have this option in the machine, as the frozen and thawed acai berry again will be crystallized and loose its flavor and color.

The importance of Pasteurized Acai berry


The whitening of the fruit is also a thermal process, applied after harvest and before the fruit becomes pulp, where the fruit is selected and washed, in order to inactivate enzymes and fix the color.

The whole process consists of immersing the acai berry in water at a predetermined temperature, or expose the fruit to flowing or superheated steam.

After bleaching, the fruit is subjected to cooling, avoiding the contamination of microorganisms and the loss of texture.

Flash Pausterization

After bleaching, the fruit goes into process to obtain the acai berry pulp. During this process, flash pasteurization is applied. This procedure consists in limiting the time of exposure to high temperatures to the minimum necessary to guarantee a product free of harmful microorganisms.

These procedure guarantees a final product 100% free of contamination and with fruit´s original color and flavor.

With the bleaching and pasteurizing processes, the cycle of food safety processes is closed to eliminate the risks of acai berry contamination.
